It’s my first day off in a while and it’s pretty perfect that it’s raining outside. I love my life but a day off is always appreciated.
This morning consisted of strawberry banana french toast and a warm cup of coffee from Honduras. And shopping 🙂
Now I’m cozied up, in my yoga pants…intention is what matters right? I intended to go to yoga. But the couch and blankie monster sucked me in.
While I take a break from working and enjoy Kitchen Nightmares (this show is addicting) on Hulu, I wanted to share some fun diy projects you could do on a rainy day. All from Pinterest, naturally.

Strawberry Banana French Toast – serves 2
- 1 egg ( My farmer’s market carries local and organic eggs)
- 1 egg white
- Almond milk
- 1 vanilla bean
- 2 tsp of brown sugar
- pinch of cinnamon
- pinch of sea salt
- 4 slices of sourdough bread
- 1 sliced banana
- Organic Strawberries
- Agave syrup
In a bowl or pie pan whisk the eggs and vanilla very well. Whisk in the sugar, cinnamon, salt and almond milk until completely combined.
In a hot pan, warm a small pat of butter or coconut oil over medium heat, to coat the bottom of the pan. Dredge the pieces of bread in the custard, flipping a few times to be sure they’re coated. Allow any excess to drip off, and add the bread to the hot pan. Cook for about 2 minutes on one side, when the bottoms are golden and toasty, flip it to the other side, cook another until the bottom is toasted dry and not soggy. The french toast should be tender and golden, but no liquid should squish out.
Top with strawberries, bananas, and agave syrup!!! Eat!!!
